Instructions:

• Wash lentils and drain
• Place 1 cup lentils in a medium pot and add 3 cups water or broth
• Cover with a lid and bring to a boil
• Reduce heat and simmer until tender, about 20 minutes
• Add additional water if necessary

1 cup dry lentils yields 2-2 1/2 cups cooked lentils.
